Pigs Beans...

This is my delicious version of this plate... It's a mexican dish... "Frijoles Puercos" (literally "Pigs Beans"),  It's great for dipping, specially in winter season...

When I looked in my pantry, I saw that I didn't have the "orthodoxs" ingredients for this recipe... Well, I did this way... 


"Frijoles Puercos" 
(my version)

Ingredientes

  • 500 gr (1 pound) cooked beans
  • 100 gr (4 oz) cooked jam, chopped
  • 50 gr (2 oz) bacon, chopped
  • 100 gr (4 oz) pork chorizo
  • 1/2 onion, chopped
  • 2 roma tomatoes, chopped 
  • 100 gr(4 oz) melting white cheese (oaxaca, mozzarella, monterey jack, chihuahua)
  • 4 tablespoon corn oil or lard



First, put a pan yo heat, and add oil and onion...


And... Stay-fry, next, add the chorizo, and continue stay-fry... medium term...


Next, add the bacon, and continue remove and stay-fry... Mmmm... this smells delicious...


Now, add the cooked jam, and mix...


See how it is!... Delicious smell!!!...


Is time to add the tomatoe, continue cooking and stir...


The appearience is terrific!!!


Ok... I try next, I used a tool to mash the mix, because I used mashed beans...


Now, add the masehd beans...


Stir, and let fry a litle...


Oooaaahhh!!! It's great... Now, add the cheese, grated...


Mix, mix, mix... the cheese are totally melted...


And serve! in 'tostadas'...


Or, tostada and taco!!! Werever... ENJOY!!!...
