Soup... to the rescue!!!

Hello everybody!!! Today, I have a special recipe... MY "Rescue Soup"... Yes!... Once time ago, in Sunday... a lazy day, we not go to supermarket, and, where we resided, al stores closed the Sunday, yes... critical!...

...Well... the lunch time just arrived, and I went to  rescue ingredientes... Copy and Paste!!! It's great for you!!!...


Rescue Soup


Ingredientes (4p):



  • 1 qt broth pinto beans
  • 1 cup beans cooked
  • 3 cups chicken broth
  • 2 chicken breast
  • 2 tomatoes
  • 1/2 onion
  • 2-3 garlic cloves
  • 1 guajillo pepper (new mexico, cascabel, ancho or pasilla... or your preference)
  • 1 avocado
  • 1 small bunch of cilantro
  • corn oil
  • salt
  • corn tortillas
  • lemon, cheese (optional)



Ok, First, we need put to cook te chicken in a sauce pan, with water, one garlic clove and salt...


Now... we chopped the onion and garlic cloves... set apart...


And we put the tomatoes in the blender... and blend (LOL)...


Ok... in a pan, put 3-4 tablespoon of corn oil, and frying the chiles...


And now, add the fried chiles into the blender too...


And grind all together... set apart...


Now, really making our soup... in a pot, put 3 tablespoon of oil used to fry the chilies... 


...Add chopped onion and garlic... and frying slowly...


When the onion and garlic are soft, add the tomatoe sauce...


...And cooking...


 ...apart, blended the beans with the broth beans...


...And add to the pot...


...Continue cooking... to a boil...


Now, the chicken is ready to use... apart the breast...


...And we use the broth to add to the pot...


Mix... and continue to a boil...


Meanwhile, cut the tortillas into strips...


And in a pan, put enough oil, and frying the tortilla strips...


..Gold color it's great...


...put in a bowl, and reserve...


...Oh! Cilantro! Absent from the picture, but, present in the dish... ok, chopped the cilantro...


... And added in the final step of the cooking...


While, cut the chicken breast, as you want...


Now, we will serve, in a bowl, put chicken breast, and avocado...


...Serve the soup...


And add the tortilla chips...


...We serve with grated cheese, avocado slice and lemon juice...

Pigs Beans...

This is my delicious version of this plate... It's a mexican dish... "Frijoles Puercos" (literally "Pigs Beans"),  It's great for dipping, specially in winter season...

When I looked in my pantry, I saw that I didn't have the "orthodoxs" ingredients for this recipe... Well, I did this way... 


"Frijoles Puercos" 
(my version)

Ingredientes

  • 500 gr (1 pound) cooked beans
  • 100 gr (4 oz) cooked jam, chopped
  • 50 gr (2 oz) bacon, chopped
  • 100 gr (4 oz) pork chorizo
  • 1/2 onion, chopped
  • 2 roma tomatoes, chopped 
  • 100 gr(4 oz) melting white cheese (oaxaca, mozzarella, monterey jack, chihuahua)
  • 4 tablespoon corn oil or lard



First, put a pan yo heat, and add oil and onion...


And... Stay-fry, next, add the chorizo, and continue stay-fry... medium term...


Next, add the bacon, and continue remove and stay-fry... Mmmm... this smells delicious...


Now, add the cooked jam, and mix...


See how it is!... Delicious smell!!!...


Is time to add the tomatoe, continue cooking and stir...


The appearience is terrific!!!


Ok... I try next, I used a tool to mash the mix, because I used mashed beans...


Now, add the masehd beans...


Stir, and let fry a litle...


Oooaaahhh!!! It's great... Now, add the cheese, grated...


Mix, mix, mix... the cheese are totally melted...


And serve! in 'tostadas'...


Or, tostada and taco!!! Werever... ENJOY!!!...

Starting... with a healthy and tradicional breakfast...


Hi! this is my first english blog project ...  This blog was born from the need idea to reach more people... I have a cooking blog in spanish language have a different recipes, mexican, spanish, etc (if you desire, you can visit)...  I thought about creating this blog, thinking of one special person ..
I hope  you like ... Thanks for read me...

OATMEAL... [spanish version]
(2 portions)


  • 1 cup rolled oats
  • 1 cup of water
  • 3/4 cup milk (2%)
  • 4 tablespoon of sugar (or sugar substitute)
  • 1 short cinnamon stick
  • 1 pinch of salt
  • a few drops of vanilla (opcional)
  • if desire, nuts, raisins, fresh fruit.




Put in a small sauce pan the water...


...add the milk...


...add the pinch of salt...


...and the sugar and the cinnamon stick...


...Put to heat and mix...


... if you desire, add the vanilla...


...When the mix start to boil, add the oats...


...Mix, and waiting for 1 or 2 minutes (YES, only!!!)...


...Look when the mixture begins to thicken...


...check how soupy  you like ... you can add more milk if desired... and serve, add the nuts, raisins and fresh fruit... and ENJOY!
